Harissa, Cumin Marinated Lamb Backstrap

Ingredients

4 x lamb leg steaks

Harissa and Cumin marinade

1 tablespoon harissa

1 tablespoon cumin

1 teaspoon coriander powder

1 teaspoon smoked paprika

Sea salt

Black pepper

Olive oil

Serve with

Sumac onions

2 shallots, sliced thinly

1 teaspoon sumac

1 lemon

Olive oil

White beans

METHOD

In a bowl combine the marinade ingredients coat the lamb, leave for a few hours. 

Cook the Lamb on a griddle pan until done to your liking. Rest then slice.

In a bowl combine the shallots, sumac, lemon, olive oil and a pinch of salt.

Serve the lamb on top of crushed white beans. Garnish with the sumac onions.
